handtmann redefines dry-sausage production with the GD 93-3 inline grinding system.
The system takes new process approaches with the aim of improving product quality and, at the same time, optimizing costs. The
basic idea is to reduce the number of process steps, reduce product stressing and to integrate the process of final grinding
in the filling process. A conclusive overall concept from handtmann:
- Coarser pre-cutting stresses the product less and saves costs in product preparation thanks to shorter
machine operating times and less working effort.
- Coarse product is evacuated effectively by the vane cell feed system as it passes through gently. The vacuum
system of the vacuum filling machine accesses enclosed air better and can extract more air. This is of crucial
advantage as regards shelf life, colour stability and the maturing process.
- The vane cell feed system conveys the product at constant pressure into the grinder head against the hold plate.
The pressure is the same at any point on the hole plate. The ring knife can thus make a clean cut at all times. Product
is not pushed or subject to turbulence as is the case on classic grinding concepts incorporating screw feed. This prevents smearing.
- One crucial advantage of the handtmann inline grinding system is the intelligence incorporated in the system itself.
Product feed and knife rotation are controlled by independent drives. The cutting profile can thus be calculated to match the
individual needs of the product. Control is just as intelligent for the automatic gristle separator, which can be adjusted to
suit any product or production methods.
- The sheer cut on the particles that are immediately enclosed and brought to final state in this process -- not experiencing any
further mechanical treatment -- conserves the protein reaction caused by the cut and influences binding positively. This produces
the neat and clear gain structure which results in an excellent and compact product appearance with no smearing. The use of
a special-purpose, patented ring knife ensures a uniform distribution of lean and fat particles.
- Clear product appearance and no smearing help to diffuse moisture from the product. Fast reduction of water activity
and, thus, an optimum drying and maturing process can commence. For many products, this means a far shorter overall drying time.
